A few years ago, my child was diagnosed with Alpha-gal syndrome after a tick bite. Overnight, our family's relationship with food changed completely. No more beef tacos, no more pork chops, no more dairy-heavy casseroles. The meals I'd been cooking for years were suddenly off the table — literally.
The hardest part wasn't dinner. It was school lunch. Every morning I'd stare into the fridge, exhausted, trying to figure out what to pack that was safe, affordable, and something my kid would actually eat. I couldn't find a resource that spoke directly to families like ours.
So I built one.
Tania's Table started as a folder of recipes I'd tested and approved. It grew into a full meal-planning system built around what I know: Alpha Gal-safe ingredients, real family budgets, and kids who have opinions about their food.
Every recipe here has been made in my kitchen, tasted by my family, and adjusted until it's something I'm proud to share. Nothing fancy, nothing fussy — just real food that works.
